Delphinium (often called larkspur in gardens) is a show-stopping flowering perennial beloved for its famously rare “true blue” blooms. It sends up elegant, towering flower spikes packed with many small florets that open from the bottom upward, keeping the display going for two weeks or more. If you look closely at the buds and each little flower’s long nectar spur, you can see why the name comes from the Greek for “dolphin”—the shape really does resemble a dolphin’s nose. It’s a classic cottage-garden plant and a total pollinator magnet, but it does ask for the right conditions to look its best.
