Saffron crocus is a small, fall-blooming perennial grown from corms (a bulb-like storage organ) and famous for producing saffron—the world’s most expensive spice by weight. In autumn it pops up with elegant lilac-to-purple, goblet-shaped flowers, each carrying three vivid crimson stigmas. Those delicate threads are carefully hand-harvested and dried to become the saffron used to perfume dishes, tint foods golden, and feature in traditional remedies that go back thousands of years.
