Joseph's coat (Amaranthus tricolor) is a speedy, warm-season annual grown mainly for its dazzling foliage. While the plant starts out fairly green, the upper leaves often transform as late summer approaches—lighting up in bold mixes of red, yellow, and green (or even solid blocks of intense yellow or scarlet in some cultivars). It does flower, but the blooms are small and subtle, letting the “painted” leaves do all the show-stopping.
