Chinese artichoke (Stachys sieboldii) is a perennial herb in the mint family grown for its quirky, pale, knobbly underground tubers—crisp, mild, and especially beloved for pickling. Above ground it forms a tidy clump of upright stems with opposite, slightly hairy leaves, and in mid to late summer it sends up slim flower spikes dotted with small pink to reddish-purple tubular blooms. It’s one of those charming plants that earns its keep twice: pretty flowers in summer and a fun, crunchy harvest in autumn.
