Lotus (Nelumbo nucifera) is the iconic “rises-from-the-mud” aquatic perennial, loved for its big, fragrant summer flowers and those perfectly round, water-shedding leaves held proudly above the surface. It grows from thick, edible rhizomes (lotus root) anchored in heavy mud, sending up leaves (some floating, some standing) and single blooms on sturdy stalks. Beyond being a showstopper in ponds and patio tubs, lotus is famously practical: its rhizomes, seeds, leaves, petals, and even stamens are widely used in food and traditional preparations.
